First up
Lemon curd syllabub

4 shortbread biscuits
50ml white wine
75g marscapone cheese
250ml double cream
100ml double cream (whipped)
4tbsp icing sugar
8tblsp lemon curd
2tblsp flaked toasted almonds
fresh mint sprigs
Crumble the biscuits into the bottom of 4 wine glasses and moisten with the half of the wine.
Whisk together marscapone, cream and icing sugar until it reaches the soft peak stage, then fold in the rest of the wine and swirl in the lemon curd so it creates a marbled effect through the cream mixture.
Spoon the mixture into the wine glasses, top with a spoonful of whipped cream, scatter with a few toasted almonds, garnish with fresh mint and serve.

Apple and toffee muffins
———————————-
2 beaten eggs
80g caster sugar
240ml milk
100g melted butter
300g s/r flour
1/2 tsp salt
2 eating apples peeled,cored and finely chopped.
50g toffee broken into small pieces.
Place all ingredients except toffee into a bowl and mix together.
Using half of the mixture fill each of 12 muffin cases 1/2 full.
share out the toffee between the placing on top of the mixture.
Top with the remaining mixture.
Place in a pre heated oven at 180 for 30 -35 mins.
